Preparation
*Chop up meat and set aside
*Peel garlic, onions and carrots
*Crush garlic, chop onions and carrots in rings,
*Place onions, carrots, garlic, celery, thyme, parsley, cloves, orange zest, nutmeg and vinegar in a cocotte
*Add chopped beef
*Cover with red wine and marinate 3 hours. Cut salted pork into strips
*In a large pan, heat oil and cook salted pork
*Strain meat and other ingredients, keep marinade and put in salted pork
*Put ingredients in pan and simmer covered for 6 hours, stirring occasionally. Season
*Serve the Daube with pasta or polenta |
